Purple and golden marble cookies with white chocolate pieces on baking paper
Sweet treat

Ube and vanilla marble cookies

Two intertwined doughs, vanilla and pieces of white chocolate.

These cookies combine vanilla dough and ube dough without fully mixing them. White chocolate accompanies both colours. Allow roughly 20 minutes to prepare, 30 minutes to chill, two batches of 12 to 14 minutes and 10 minutes to cool.

Ready in about 1 h 30

Ingredients

Makes about 12 cookies, with 44 g of dough per cookie.

  • 100 g softened unsalted butter
  • 60 g brown sugar and 40 g white sugar
  • 1 medium egg, about 50 g without its shell
  • 180 g plain wheat flour + 10 g for the vanilla half
  • 10 g UBÉRA powder for the ube half
  • 10 ml milk for the ube half
  • 60 g chopped white chocolate
  • 1 tsp vanilla extract
  • 3 g baking powder
  • 2 g fine salt

Preparation

  1. 1Mix the softened butter with both sugars, then stir in the egg and vanilla. The butter should be soft, not melted.
  2. 2Combine the 180 g flour with the baking powder and salt. Mix briefly into the butter and egg mixture, then divide this dough into two equal weights.
  3. 3Add the extra 10 g flour to one half. Mix the UBÉRA powder with the 10 ml milk, then incorporate into the other half. Share the white chocolate between both doughs.
  4. 4Shape 12 cookies, combining a small portion of each dough for every cookie. Twist together once without kneading to preserve the marbling. Chill for 30 minutes.
  5. 5Preheat the oven to 180°C, conventional heat. Place 6 cookies on a cool tray lined with baking paper, leaving at least 5 cm between them. Keep the others chilled.
  6. 6Bake the first batch for about 12 to 14 minutes, checking from 12 minutes: the edges should be set and the centre should no longer look liquid. Adjust the time for your oven.
  7. 7Leave on the tray for 10 minutes before moving to a rack. Bake the second batch on a cooled tray.

Tip

To keep the marbling distinct, twist the two doughs together once without over-kneading.

How to use ube powder: quantities and preparation

Variations

  • Without chocolate pieces: keep the marbled base and watch the spread during baking. The weight of dough per cookie will change.
  • More vanilla: add a little extra extract to suit your taste.

Frequently asked questions

Will the colour match the photo?

The purple shade varies with the powder, dough and baking. The result may differ from the photo.

Why are the two doughs slightly different?

The ube half receives powder and a little milk; the vanilla half receives extra flour. Keep the doughs separate until shaping to preserve the marbling.

Are these cookies gluten-free or vegan?

This formula contains wheat, an egg, butter, milk and white chocolate. It is neither gluten-free nor vegan.
